Vande Mataram!

For the past 2 days I have been hearing the song "Vande Mataram"  that  kids were practicing at school for the Republic day. It is so wonderful to see that  kids are learning the importance of patriotism and what it means to be one at an young age. Since, they were cheerfully participating in the Republic day function I thought I should prepare things that reflects the same theme.  So, digging into the fridge to find what vegetables that I have, gave me an idea to prepare the tricolour paratha...

Ingredients
Whole wheat flour - 2 cups
Salt - 1/4 to  1/2 tsp
water - 1/2 cup

Procedure
Mix all the ingredients together to make a stiff dough. Set it aside for 1/2 hr.
For the Stuffing
 
Ingredients
Small cauliflower - 1
Carrot - 1
Coriander leaves - 1 handful
Cumin  powder - 1/2 tsp
Coriander powder - 1/2 tsp
red chilli powder - 1/2 tsp
turmeric powder - 1/4 tsp
Asafoetida - 1/4 tsp
oil - 1 Tb spoon

Procedure
Wash the cauliflower  and grate it well. Peel the carrot skin and grate it as well. Now  
warm the pan and put the oil.
After the oil warms up, saute the grated cauliflower & carrot till it feels soft. Now add the turmeric powder, chilli powder, asafoetida, cumin & coriander powder as well. Saute them for few more minutes in the low flame.  Switch off the stove and add the chopped coriander leaves at the end to maintain the flavour and colour.



Procedure for making the paratha
Make small balls of the dough that you made. Flatten it with your hands and roll it on the plain wheat flour . Stuff it with a table spoon of this mixture. Now using the roll pin roll it smoothly and make your tricoloured parathas.  Be gentle with the parathas and put it on a hot pan to cook it on both the sides. Smear it at the end with a spoon of ghee or butter.





Your tasty parathas  are ready for you to eat it with pickle or green chutney or tomato chutney whichever suits your taste buds.

Since kids love salad, decided to cut and arrange the  vegetables they like eating raw to add to the tricolor theme.

 Variations

1. For the stuffing you can substitute garam masala - 1 tsp instead of the Jeera & cumin powder to change the flavour.
2. You can avoid carrot if you prefer not to have the sweetness it brings in and just use  cauliflower alone  to make the stuffing.

Notes
1. I use olive oil to smear the paratha instead of  butter or ghee.
2. Need to cool the stuffing to make it easy for rolling the paratha, otherwise it gets very sticky.
